Scallop Carpaccio

Recipe: Carpaccio of Saint Jacques

Scallop carpaccio recipe cooked in lime juice, a nice plate for a light recipe, amateurs will be in for a treat. Scallops, everyone at home loves scallops.

Recipe ingredients

  • Saint Jacques Carpaccio recipe for 4 people:
  • 4 Beautiful scallops
  • 1 lime
  • 8 kumquats
  • 4 sprigs of coriander
  • 2 tablespoons of olive oil
  • 1 teaspoon of red berry
  • Salt flower
  • Peppercorns

Instructions

  1. Put the kumquats in a saucepan, cover with water and leave to candy for half an hour.
  2. Drain the fruit.
  3. Thinly slice the kumquats
  4. Thinly slice the scallops.
  5. Place the scallops on a platter.
  6. Add the slices of kumquats
  7. Zest the lime.
  8. Cut a lime in half.
  9. Squeeze the juice from the ½ lemon.
  10. Pour the juice over the scallops.
  11. Season with fleur de sel.
  12. Pepper with coarse ground pepper.
  13. Scatter the lime zest.
  14. Finely chop the coriander leaves with a knife.
  15. Sprinkle the coriander over the scallops.
  16. Cook for one to two hours.
  17. Very cool server.
