Recipe: Eggplant with chickpeas

I had made this recipe to my father who loves eggplant with chickpeas.
Recipe ingredients

- 3 eggplants
- 3 beautiful tomatoes
- 1 can of chickpeas
- 3 shallots
- 2 cloves garlic
- 1 teaspoon of ras el hanout
- 1 teaspoon ground cumin
- 1/2 teaspoon of harissa
- 1 tablespoon of olive oil.
- Salt and pepper
Instructions
- Peel and finely chop the shallots and garlic.
- Rinse then dry the tomatoes and slice them into small wedges.
- Rinse then dry the eggplants and slice them into small cubes.
- Heat a pan with the oil.
- Sear the shallots then the garlic.
- Add the cubed eggplant, sear them for a few minutes.
- Drain and rinse the chickpeas.
- Pour in the chickpeas.
- Pour in all the spices.
- Salt and pepper
- Pour the tomatoes into quarters.
- Cover with water and simmer for a good hour.
- Once the water has almost all evaporated, your dish is ready.
