Recipe ingredients

  • Recipe of Carpaccio of Saint Jacques and passion fruit for 4 people:
  • 4 Beautiful scallops
  • 1 lime
  • 1 passion fruit
  • 2 sprigs of coriander
  • 2 tablespoons of olive oil
  • 1 teaspoon of black lump egg
  • ¼ pepper in vinegar.
  • Salt flower
  • Peppercorns


  1. Thinly slice the scallops.
  2. Place the scallops on a platter.
  3. Cut a lime in half.
  4. Squeeze the juice from the ½ lemon.
  5. Pour the juice over the scallops.
  6. Season with fleur de sel.
  7. Pepper with coarse ground pepper.
  8. Finely chop the coriander leaves with a knife.
  9. Sprinkle the coriander over the scallops.
  10. Cut the passion fruit in half.
  11. Remove the flesh from the fruit using a grapefruit spoon.
  12. Sprinkle the seeds with the passion fruit.
  13. Leave to rest for an hour in the refrigerator.
  14. Serve very chilled.
