Recipe ingredients

  • Terrine Saint Jacques recipe for 8 people:
  • 5 eggs
  • 400g of scallops (without coral)
  • 170g crab crumbs
  • 30g butter
  • 250g heavy cream
  • 10 cl of white wine
  • 1 clove of garlic
  • 10 sprigs of chives
  • ½ teaspoon of paprika
  • 1 knife tip of ginger
  • 2 drops of Tabasco
  • Salt and pepper


  1. Rinse the scallops and chives in clear water.
  2. Wipe them with food paper.
  3. Melt the butter in a skillet.
  4. Add the garlic.
  5. Sear the scallops in the hot butter.
  6. Pour in the white wine and let reduce for a few minutes.
  7. Salt and pepper
  8. Reserve a few scallops.
  9. Mix the rest.
  10. Wipe the chives with a paper towel.
  11. Finely slice the chives
  12. Beat the eggs with the cream and crab crumbs and the spices.
  13. Mix with the scallops and chives and Tabasco.
  14. Place in a hot oven at 210 ° in a bain-marie for 40 minutes
