Recipe: Sicilian salad
Sicilian salad recipe back from Sicily with my daughter I couldn’t resist offering you this mixed salad that arrived straight from the south of Italy. Original salad recipe to start a meal, or even for a light but complete meal. Nothing is missing in this salad, the chicken, green salad, purple artichokes, fresh green bean and coconut mushrooms. Of course, sprinkle your Sicilian salad generously with beautiful extra virgin olive oil.
Recipe ingredients
- Sicilian salad recipe for 4 people
- 4 small zucchini
- 2 cloves garlic
- 2 Roma tomatoes
- 12 button mushrooms
- 2 teaspoons of oregano
- 4 purple artichokes
- 100 gr green beans
- 20 small spinach leaves
- 8 coconuts
- 4 chicken breasts
- 4 sprigs of fresh thyme
- 10 cl of white wine
Instructions
- Cut the mushrooms in 4 then fry them in a very hot pan with 2 tablespoons of olive oil on a high heat, so that the water evaporates.
- A few minutes before the end of cooking, add the oregano and often turn your mushrooms so that they grill everywhere.
- Cut the zucchini into 1 cm slices and grill them in the same pan with 2 tablespoons of olive oil.
- Peel the green beans and cook them with the coconuts in slightly salted water.
- Cook the spinach in salted water for a few seconds, drain it and place it on absorbent paper.
- Cut the artichokes into 4 and cook them in the same pan with the butter and 1 tablespoon of olive oil, add the white wine and let reduce until the end.
- Grill the chicken breasts in the pan, let them brown, add the fresh thyme.
- Cut the tomatoes into quarters, clean the salad
- Start to mount your plate with the green salad, then go as you want.
