Recipe: Angel or demon cookies

Recipe ingredients
- Recipe Angel or demon cookies for 60 pieces:
- 500 g flour
- 8 g of fine salt
- 8 g of sodium bicarbonate
- 125 g butter
- 30g peanut butter
- 170 g of caster sugar
- 170 g of vergeoise sugar
- 2 eggs (125 g)
- 4 g vanilla extract
- 1 pinch of powdered ginger (optional)
- 90 g white chocolate chips
- 130 g dark chocolate chips
- 3 teaspoons of powdered chocolate
- 1 pinch of ginger
Instructions
- Take out the butter.
- Preheat the oven to 170 °
- Sift together the flour and baking soda and ginger.
- Add salt to the flour.
- Mix in the bowl of the mixer, the eggs, the butter and the sugars.
- Add the peanut butter and vanilla extract.
- Add the flour.
- Divide the preparation into two equal parts.
- Add 80 gr of white chocolate chips in the first part.
- Pour in the vanilla powder
- Add the powdered ginger, more or less according to your taste, it remains optional but we all know the reputation of ginger.
- Mix gently to incorporate well and have a homogeneous paste.
- Stir in the other half of the chocolate powder.
- Add the dark chocolate chips.
- Mix gently to incorporate well and have a homogeneous paste.
- Form small balls of pasta, start with one color and then the other.
- Place the balls on a baking sheet covered with cling film.
- Glue one color against the other by tightening them a little.
- I used a heart-shaped cookie cutter for Valentine’s Day.
- Flatten the balls with the palm of your hand.
- Remember to space the cookies a bit.
- Bake 12 minutes to 15 minutes in the oven in the middle position.
