Caramelized pear alms recipe for 4 people
Ingredients :
Crepe :

  • 130 g flour
  • 4 eggs
  • 250 ml of milk
  • 60 g butter
  • 4 ripe Williams pears
  • 1 tablespoon of honey
  • 2 vanilla pods
  • 250 g fresh raspberries
  • 24 mint leaves

Instructions

  1. Gently dissolve the flour in the milk, break an egg and mix and continue until the end of the eggs.
  2. Leave your dough to rest for a few hours. Then cook the pancakes, one per person.
  3. Set aside 24 raspberries for decoration.
  4. Make a coulis with the rest of the raspberries with icing sugar, pass everything through a Chinese.
  5. Peel, cut the pears, melt them gently in the honey, to obtain a caramelization.
  6. Garnish the pancakes with the pear preparation.
  7. Close with half a vanilla bean that you have sliced lengthwise.
  8. Put the coulis on the middle of your plate, place your aumônière well in the middle and the raspberries outside the circle and 6 mint leaves around.
