Recipe and curry squid

We love squid at home and my daughter loves curry as well, this recipe was for her. Cooking with squid is always difficult to master, either very short or very long, the choice is yours. Squid is a cheap seafood product, it allows everyone to enjoy it, what a memory of Greece with these squids that we tasted directly on the beaches under the sun, I really love this country, sorely lacking. I think I could have settled in Greece and lived under the sweetness of the sun. I served these curried calamari with white rice, we loved this creamy and very tasty sauce with coconut milk. I tried freezing the rest of the squid and curry, I’ll keep you posted.

Squid and curry recipe for 2 people:

Ingredients

  • 650 gr of small red squid
  • 1 large carrot
  • 2 shallots
  • 1 fresh pink garlic clove
  • 1 tablespoon of Madras curry
  • 10 Thai basil leaves
  • 2 tablespoons of olive oil

Instructions

  1. Preheat the oven to 200 °
  2. Clean the squid, rinse them with plenty of water
  3. Peel the carrot, then cut it into tiny cubes.
  4. Heat the Work with the oil, add the carrot cubes for 3 minutes
  5. Add the peeled and finely chopped shallots.
  6. Squeeze the garlic over the carrots.
  7. Reserve the carrot as soon as the cubes are tender
  8. Cut the squid and the heads into thin rings in half.
  9. Sear the squids in 1 tablespoon of very hot oil.
  10. Add the pre-cooked shallots and carrots.
  11. Sprinkle with the curry
  12. Bake for 40 minutes.
  13. Chop and add the Thai basil just before serving
