Cordon bleu recipe from Franc comtois. In Franche-Comté, cordon bleu combines the quality of products with the aromas of Comté and Luxeuil ham to delight young and old. Cordon bleu mounted with chicken cutlets, some add fresh cream. Of course I served my Franc Comtois cordon bleu with a very fresh Savagnin.

Recipe ingredients

  • Cordon bleu Franc comtois recipe for 4 people
  • 8 very thin Chicken Cutlets
  • 80 g of grated Comté
  • 16 ½ slices of Luxeuil ham
  • 32 county slices about 200 g
  • 20 g butter
  • 1 tablespoon of olive oil
  • Salt and pepper.


  1. Finely chop the chicken cutlets or have your butcher do it.
  2. Place a cutlet flat and crush it with the slice of a chef’s knife.
  3. Place 4 slices of Comté cut into strips.
  4. Then a very thin slice of Luxeuil ham.
  5. Sprinkle with grated Comté.
  6. Then a very thin slice of Luxeuil ham.
  7. Place 4 slices of Comté cut into strips.
  8. Finish the assembly with a chicken cutlet.
  9. Tie the ends with wooden spikes, so that it is easier to turn them over.
  10. Heat the pan with the butter and olive oil.
  11. Place the Franc comtoise cutlets.
  12. Once grilled on one side, turn them over to grill them on both sides.
