Recipe ingredients

  • Double Fat Salad Recipe
  • 600 g of double fat cooked by the butcher
  • 4 tablespoons of fluid cream
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of strong mustard
  • 2 shallots
  • ½ bunch of flat-leaf parsley
  • 10 sage leaves
  • Salt and pepper


  1. Rinse the herbs with clean water, then dry them with food paper.
  2. Rinse the double fat with water, then cut it finely.
  3. Peel the shallots, then mince them finely.
  4. Slice the herbs very finely with a knife.
  5. Pour the mustard into the salad bowl.
  6. Add the stirred cream to mix well.
  7. Sow the herbs on the cream.
  8. Add the shallot and stir.
  9. Pour in the vinegar and beat a little so that the sauce is well bound.
  10. Season with salt and pepper to taste the sauce and adjust the seasoning if necessary.
