Chorizo chicory recipe
I’m a fan of cooked or raw endives, it doesn’t matter, I enjoy it. But when I cook them right in the pan with a little olive oil, it becomes killer. Endives with chorizo, deliciously flavored with this sausage from across the Atlantic, a small béchamel garnished with freshly grated Comté and voila, it’s divine. With this way of cooking endives, they will never be bitter and there is no excess water in the sauce. I like chorizo, its flavor, its fragrance and especially the color it gives to my sauces, too bad my daughter doesn’t like it. I take as much pleasure in typing this recipe as the moment when I prepared them, frankly test it, !!! You will love. A good little red to accompany this recipe of endives with chorizo and voila.
Chorizo chicory recipe for: 2 people
Ingredients :
- 4 endives
- 60 thinly sliced chorizo
- 30 g of Comté
- 25g butter
- 25 g flour
- 25 cl of raw milk06
- 1 tablespoon of olive oil
- Salt
- Pepper
Instructions
- Preheat the oven to 180 °.
- Cut the endives in half, without cutting the sections.
- Pour the oil into a pan.
- Place the endives on the cut side in the hot oil.
- Cover and cook over low heat for 15 minutes, add a little water if necessary.
- Season generously with salt and pepper.
- Turn the chicory over and continue cooking for another 15 minutes.
- Grate the county.
- Prepare the homemade béchamel sauce, if you need to follow the link.
- Add ¾ of the Comté to the béchamel sauce.
- Place the chorizo on a cut endive, add the other half, then place in the dish.
- Repeat until the endives are exhausted.
- Pour the béchamel sauce over the endives.
- Sprinkle with the rest of the county.
- Bake in the oven for 30 minutes.
