Recipe: Barbecued swordfish

Grilled swordfish recipe, enhanced with a tarragon pesto which will melt on the swordfish which will cook gently on the barbecue. Instructions

  1. Rinse the fish, then dry it with food paper.
  2. Place 2 tablespoons of pesto on each steak
  3. Grate 10 grams of Parmesan on each fish.
  4. Sow 5 grams of pine nuts on the pesto
  5. Salt and pepper
  6. Cook on the barbecue for about 10 minutes, being careful not to overcook it.
  7. I had placed it on a baking sheet, to protect my plancha.
