Calamari Tagine Recipe

Squid tagine recipe for 4 people
Ingredients :
- 1,200 kg of squid (it takes about 30% loss)
- 2 tomatoes
- 1 onion
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of curry
- 1/2 teaspoon of ginger
- 1 teaspoon of colombo
- 2 tablespoons of flat-leaf parsley
- 2 cloves garlic
- 6 black olives
- Salt and pepper
Instructions
- Preheat the oven to 180 °.
- Clean and prepare the squid under hot water, empty them and rinse the inside of the body well.
- Cut off the head at eye level just below the beak.
- Remove all the skin of the squid on the body and the tentacles.
- Slice the squid into rings of about 1 cm, cut the tentacles in half.
- Heat the tagine with the oil.
- Add the peeled and crushed garlic then the spices.
- Let the spices develop their aromas, they should tickle your nostrils.
- Add the onion and parsley, when the onion is translucent.
- Take the squid rings and let them swell.
- Add the tomatoes and black olives.
- Place the tagine in a hot oven 180 ° for 30 minutes.
