Calamari Tagine Recipe

Squid recipe for fun, we love them madly at home, in all their forms they are always welcome. A fish tagine with squid rings, of course if you can’t find fresh one you can use frozen squid rings. For the squid, pay attention to the cooking you have two options, either fast 2 to 3 minutes or long over an hour and this way they will not be rubbery.

Squid tagine recipe for 4 people
Ingredients :

  • 1,200 kg of squid (it takes about 30% loss)
  • 2 tomatoes
  • 1 onion
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of curry
  • 1/2 teaspoon of ginger
  • 1 teaspoon of colombo
  • 2 tablespoons of flat-leaf parsley
  • 2 cloves garlic
  • 6 black olives
  • Salt and pepper

Instructions

  1. Preheat the oven to 180 °.
  2. Clean and prepare the squid under hot water, empty them and rinse the inside of the body well.
  3. Cut off the head at eye level just below the beak.
  4. Remove all the skin of the squid on the body and the tentacles.
  5. Slice the squid into rings of about 1 cm, cut the tentacles in half.
  6. Heat the tagine with the oil.
  7. Add the peeled and crushed garlic then the spices.
  8. Let the spices develop their aromas, they should tickle your nostrils.
  9. Add the onion and parsley, when the onion is translucent.
  10. Take the squid rings and let them swell.
  11. Add the tomatoes and black olives.
  12. Place the tagine in a hot oven 180 ° for 30 minutes.
