The Château de Fayolle

The Château de Fayolle in Saussignac in the Dordogne

What a crush at the sight of this medieval castle in the Dordogne, this beautiful residence, its chapel, its dovecote and its garden surrounded by a large stone wall. It is said that the property exported already in the 13th century, in England, its wine productions. It was in 2010 that Julien Taylor bought this beautiful residence and gave it yet another modern boost which today makes it one of the quality wines of the Bergerac region.

Its reputation is well established in red and rosé Bergerac; its dry white Sauvignon brings its share of medals every year; and finally when the vintage allows it, the château produces a sweet wine in AOP Saussignac. The flagship of the house, it will combine wonderfully with French gastronomy and the impulses of great chefs, in order to accompany the most delicate dishes.

Bergerac white 2015
In Bergerac, the winegrowers harvest the grape varieties at full maturity, well suited to their terroirs. From the first contact with Sylvie, I felt her passion for good things. While tasting this Bergerac blanc Sauvignon, I particularly liked its pale yellow color with brilliant green reflections, but also and especially its aromas of green fruits and wild flowers. It goes wonderfully with fish and particularly seafood. Awarded a star in the 2016 Hachette guide, it will not leave anyone indifferent.

Wild boar’s blood 2014
Deep garnet red, this wine aged in French oak barrels will not leave anyone indifferent, the nose is intense, the aromas of black fruits mingle with woody notes. This generous wine will be appreciated in the kitchen and particularly by chefs who seek to highlight local products. This wine of character at the height of its 14.5 ° will accompany the most refined dishes. It is the fruit of the know-how of this area, helped by the climate and the sunshine of this beautiful region, La Dordogne.

Saussignac PDO 2013
Sweet white wine with an expressive nose of candied citrus fruits (orange and lemon), then quince and finally toasted and spicy nuances. A sensation of fresh fruit is manifested with the flavors of candied fruit, it will complement the tasting of these slightly tart lemon macaroons, pairing perfectly with this beautiful pastry. Acquisitions and ancestral knowledge make this Saussignac wine an asset for French gastronomy, including foie gras but also certain pastries. Exported since at least 1254 to England, this Dordogne wine has contributed to the reputation of the work of our winegrowers.
