Recipe ingredients

  • Antillean black pudding with a spoon: for 6 people
  • 100 g of West Indian blood sausage;
  • 1 nice apple
  • 60 g butter
  • 50 g of brown sugar


  1. Peel the apple, then cut it into small circles the size of your spoons.
  2. Heat the butter in a pan with the brown sugar.
  3. Let the sugar color.
  4. Place the apple pieces in the colored butter and cook, but keep the apples still crisp.
  5. Place the apples at the bottom of the porcelain spoon.
  6. Heat the spoons with a torch if your apples are cold.
  7. Pour a little caramel over the apples.
  8. Cut the sausage into thin slices.
  9. Place a slice of West Indian blood sausage on each apple.
