What are the different Franche-Comté cheeses?

AOP Comté

Comté AOP (Protected Designation of Origin) is a product that will make you travel in just one bite. With its rind mixing shades of brown and gold, it is one of the most consumed cheeses in France. Because of its rather varied ripening period, you can get it all year round.

There are two main types of PDO Comté. The first version is the one you will find in summer. It has diversified and fruity aromas. As for the second format, it is available in winter. It has vegetal undertones and a nutty taste.

The production of Comté AOP begins with the inoculation of the milk with specific sourdoughs. Everything is heated and stirred to flow the whey. When the right texture is obtained, the curd is drawn off for molding. Comté can be used to make many recipes. You can prepare a gratin dauphinois with Comté cream or make puff pastry twists.

Morbier AOP

Morbier AOP has a peculiarity that distinguishes it from other cheeses. It has a black line that seems to cut it in two. To understand the origins of this element, you have to go back centuries. This product was made in two parts.

First, a thin layer of ash was used to cover the molded curd in order to protect it. A second curd was added thereafter. This tradition has remained today with the difference that it is made with vegetable charcoal.

Morbier AOP is a cheese made from raw cow’s milk made with an uncooked pressed dough. You can enjoy it as an aperitif with wine or try recipes like hedgehog bread or savory pudding.

Mont d’Or AOP

Mont d’Or AOP also called Vacherin du Haut Doubs is a seasonal cheese. Available from August to March, it has a tender and flowing paste obtained thanks to a long maturing in a cool cellar. It is made from milk from Simmental or Montbéliarde cows. For its marketing, it is usually presented in a box of spruce.

With its creamy texture, you can consume Mont d’Or AOP with a teaspoon. Long before, you can heat it in the oven with a good clove of garlic. As an accompaniment, you can make a green salad and cook potatoes. With an excellent white wine, you will enjoy the delicacies of this Franche-Comté cheese.

La Cancoillotte

Cancoillotte is obtained by melting skimmed milk and adding salt and butter. With its liquid texture, you can consume it hot or cold. It can be used as a spread for tasting your bread.
