A typical Franc Comtoise recipe, now you can find cancoillotte in all supermarkets. Well, I admit that depending on the brands, the quality varies (choose your cancoillotte well !!) the children will love this sauce so creamy and so easy to make, we really like cheese-based sauces. I chose to make fresh pasta to accompany my garlic cancoillotte sauce. I chose a dry white, to make this cancoillotte recipe with garlic and of course with ham from Luxeuil, just for a big nod to my Haute Saône, you can replace it with another ham, well understood. This wonderful sauce will go very well too, on a plate of grilled potatoes with a nice green salad, don’t forget that this cheese remains one of the least caloric cheeses.
Garlic cancoillotte sauce recipe for 4 people:
Ingredients
- 300 g of garlic cancoillotte in a jar
- 100 g of Luxeuil raw ham
- 1 red onion
- 1 tablespoon chopped chives
- 15 cl of white wine from the Jura Coast
- 30g butter
- Peppercorns
Instructions
- Peel the onion, then finely chop it.
- Cut the Luxeuil ham into a chiffonade.
- Sear the onion in the hot butter.
- Add the wine as soon as the onion is colored.
- Reduce the wine by 3/4.
- Crush the peppercorns.
- Pepper generously, without salt.
- Incorporate the cancoillotte into the wine reduction, a few minutes before serving.
- Stop cooking with the first broth.
- Sprinkle with the chives.
- Sprinkle with the ham, enjoy hot !!
