Black Forest Recipe
A great classic !!!! But frankly, impossible to leave my site without this recipe. Me, I like candied cherries a lot, with this black forest recipe, for my recipe I chose cherries in brandy (house of course). The softness and the chocolate flavor delight all lovers. But it is above all a poisoned gift from my brother Kiki, because I was going to eat at his place and he took the opportunity to ask me to make him a black forest, well let’s see…. !!! Good for my sponge cake, I did not choose the easy solution, but on the other hand I am satisfied with the result. Of course you can vary the flavor by using more or less alcoholic syrup from the cherries; at home this time, there were no children, I admit that my hand was a bit heavy !! in any case I loved my black forest. Of course I used the cherries of Papi René (who makes us a jar of his beautiful sour cherries every year).
Black Forest recipe for 12 people:
Ingredients :
- The sponge cake for 2 baking sheets
- 8 eggs
- 250 g of sugar
- 200 g flour
- 150 g of water
- 300 g granulated sugar
- 150 g cherries in brandy + juice
- 300 g of chocolate
Instructions
- Preheat the oven to 180 °.
- Melt 200 g crushed chocolate in a bain-marie.
- Separate the whites from the yolks.
- Add the egg yolks to the melted chocolate.
- Slice the very cold butter into small cubes.
- Whisk in the chocolate preparation.
- Beating egg whites.
- Incorporate the whipped egg whites into the chocolate preparation.
- Mix gently with a spatula without breaking the egg whites.
- Sprinkle the flour on the preparation and incorporate it with the spatula.
- Place a sheet of baking paper on a baking sheet and pour the sponge cake, or use a missed mold.
- Bake in the hot oven for 30 minutes.
- Let cool on rack.
- Cut the sponge cake into two or three discs.
- Filter 15 cl of alcohol from the cherries, add 5 cl of water.
- Brush the circles of sponge cake on each side with the syrup.
- Lay the first circle on the dish.
- Add the Chantilly to a good thickness.
- Prick half of the cherries in the whipped cream.
- Add the second circle on the whipped cream, press lightly on the circle of sponge cake.
- Add the Chantilly to a good thickness.
- Prick half of the cherries in the whipped cream.
- Grate the rest of the chocolate.
- Cover your cake with the grated chocolate.
- Place in the refrigerator one night before tasting it, it will be even softer.
