Cancoillotte with yellow wine

Recipe: Cancoillotte with yellow wine

Recipe for Cancoillotte with yellow wine, a recipe in the pure Franc Comtoise tradition. Of course you will have to be a lover of yellow wine, to fully enjoy this cancoillotte. Franche Comté and its cancoillotte, one of the least caloric cheeses, when it is prepared without a lot of fat, not like here of course. Cancoillotte with yellow wine, this recipe is often reserved for Franc Comtois who like Savagnin and Vin Jaune, a local wine with a pronounced taste, I love my region. Children are more reserved with this recipe. Obviously you can more or less put yellow wine according to the desired taste. I still have a lot of ideas to present the cancoillotte with different and sometimes surprising scents.

Recipe ingredients

  • Yellow wine Cancoillotte recipe for 10 people:
  • 500 g matured metton
  • 10 cl of yellow wine
  • 250 g of butter, more or less according to each one
  • ½ nutmeg
  • 50 cl of water
  • 4 g optional salt
  • 1 g of pepper

Instructions

  1. Leave the metton to temperature in the kitchen.
  2. Pour the water over the metton one or two hours before melting it, or even overnight.
  3. Put the fondue pot to heat under a low heat.
  4. Add the yellow wine.
  5. Pepper, Salt
  6. Grate the nutmeg directly over the melted cancoillotte.
  7. Your fire should be low, a little patience to prepare your cancoillotte.
  8. Stir constantly with a wooden spoon, the bottom of the pan should not stick.
  9. Once melted, when there are no more lumps, turn off the heat.
  10. I hate small lumps that persist, I mixed the cancoillotte a little bit, it changes the taste.
  11. Slice your butter into small pieces and incorporate into your preparation.
  12. Pour the cancoillotte into bowls, once cold, place it in the refrigerator.
