We love hot oysters at home, they are always present at Christmas and New Years and sometimes even raw. A great idea to end the year with hot oysters with fresh figs. I particularly appreciated the sweetness of the figs with the barely salted sabayon and the powerful taste of the sea, the sweetness against the strength.

Recipe ingredients:

  • Hot oyster recipe with fresh figs for 3 people:
  • 12 Hollow oysters N ° 3 from the Arcachon Basin
  • 2 fresh figs
  • 15 cl of white wine
  • 15 cl of liquid cream
  • 1 egg yolk
  • 1 teaspoon ground pepper

Instructions

  1. Rinse the figs quickly under the tap.
  2. Cut a fig into small cubes and the other into 12 strips.
  3. Open the oysters and collect the first water
  4. Collect the second water.
  5. Take the oysters out of the shell.
  6. Filter the water.
  7. Crush the peppercorns.
  8. Let reduce by half.
  9. Pour in the wine and let reduce by half for about 10 minutes
  10. Add the cream and let reduce further, in order to obtain a very smooth sauce, you need about a tablespoon per oyster.
  11. Place the oyster shells on a ball of aluminum foil, and press so that they are quite stable.
  12. Place one oyster per shell.
  13. Place 2 to 3 pieces of figs in each shell.
  14. Mix the egg yolk with the sauce off the heat.
  15. Pour sauce over each oyster to fill the shell.
  16. Lightly pepper each oyster.
  17. Place the fig slice on the sabayon.
  18. Place in a hot oven at 200 ° for 7 to 8 minutes.
