Recipe: Kidney with Madeira
Kidney recipe in Madeira, we love kidneys at home, all kidneys. For this recipe I chose beef kidneys, which are still very cheap, I often think of a low budget. I decorated my kidneys with Madeira, to flavor the sauce a little, but I did not flambé it.
Recipe ingredients
- Madeira kidney recipe for 6 people:
- 2 beef kidneys
- 4 shallots
- 250 g fresh mushrooms
- 10 cl of madeira
- 15 cl of fluid cream
- 3 large tablespoons of oil
- 45 g butter
- 1 tablespoon of veal stock
Instructions
- Trim the kidneys like here.
- Cut the kidneys.
- Heat the pan very hot with the oil.
- Throw the kidneys in 2 tablespoons of very hot oil.
- Stir to quickly sear all the kidneys.
- Run the kidneys quickly under the tap of water once the kidneys are colored.
- Reserve the kidneys and clean the pan.
- Heat the pan with the last spoonful of oil.
- Brown the shallots.
- Add the mushrooms to the very hot pan to quickly evaporate the water.
- Deglaze with Madeira.
- Pour the veal stock diluted in 10 cl of water.
- Add the kidneys.
- Simmer for 20 minutes.
- Add the fluid cream.
- Let reduce for 10 minutes.
