Recipe: Kidney with Madeira

Kidney recipe in Madeira, we love kidneys at home, all kidneys. For this recipe I chose beef kidneys, which are still very cheap, I often think of a low budget. I decorated my kidneys with Madeira, to flavor the sauce a little, but I did not flambé it.

Recipe ingredients

  • Madeira kidney recipe for 6 people:
  • 2 beef kidneys
  • 4 shallots
  • 250 g fresh mushrooms
  • 10 cl of madeira
  • 15 cl of fluid cream
  • 3 large tablespoons of oil
  • 45 g butter
  • 1 tablespoon of veal stock

Instructions

  1. Trim the kidneys like here.
  2. Cut the kidneys.
  3. Heat the pan very hot with the oil.
  4. Throw the kidneys in 2 tablespoons of very hot oil.
  5. Stir to quickly sear all the kidneys.
  6. Run the kidneys quickly under the tap of water once the kidneys are colored.
  7. Reserve the kidneys and clean the pan.
  8. Heat the pan with the last spoonful of oil.
  9. Brown the shallots.
  10. Add the mushrooms to the very hot pan to quickly evaporate the water.
  11. Deglaze with Madeira.
  12. Pour the veal stock diluted in 10 cl of water.
  13. Add the kidneys.
  14. Simmer for 20 minutes.
  15. Add the fluid cream.
  16. Let reduce for 10 minutes.
