Recipe for mirabelle plums with brandy

Mirabelle eau de vie, a recipe to keep for the end of year celebrations, they are particularly abundant this year. After the pleasure of shaking the mirabelliers, of picking up all these golden fruits, a little nap in the shade is in order. The scent of mirabelle plums tickles our nostrils during this little moment of relaxation. I almost like the plums that are still a little green and not too ripe, for the recipe for mirabelle eau de vie, be careful, alccol mistreats the plums, so do not take them too ripe.

Recipe ingredients

For a one liter jar:

  • 800 g of mirabelle plum with the pit
  • 4 tablespoons of sugar
  • ½ liter of fruit alcohol
  • 1 cinnamon stick

Instructions

  1. Wash and boil then wipe the jars
  2. Rinse them with clean water and then let them dry.
  3. Place the mirabelle plums in the jar, squeezing them a little.
  4. Add a spoon every two layers of mirabelle plums.
  5. Cut the cinnamon stick in half then place it on the mirabelle plums.
  6. Pour the fruit alcohol over the plums.
  7. Set aside for Christmas in a cellar, turning them from time to time.
