Recipe: Pickled Mirabelle
Mirabelle plums with honey vinegar, flavored with tarragon, I can’t wait to be able to taste them. Mirabelles in vinegar for a terrine this fall, I will test them every month. Super, I love the sweet and salty, here fruits generous in taste and in sugar, make come candied in honey vinegar and can be consumed all year round.
Recipe ingredients
- Recipe for 1 boccal
- 350 g of mirabelle plums
- 100 g brown sugar
- 1 cinnamon stick
- 20 cl of white honey vinegar
- 1 tablespoon of honey
- 3 stalks of tarragon
- 1 bay leaf
- 1 teaspoon of 4-grain pepper
Instructions
- Rinse the cherries under running water, then dry them with a kitchen towel.
- Heat the vinegar with the sugar, honey and cinnamon stick.
- Let the vinegar cool while adding the bay leaf, cloves and bird’s eye pepper.
- Store your mirabelles in the jar.
- Pour the cold vinegar over the mirabelle plums, close your jar and leave to stand for 2 months, away from light.
- My favorite wine for this recipe will be chosen according to the terrine
