Mirabelle plums in vinegar

Recipe: Pickled Mirabelle

Mirabelle plums with honey vinegar, flavored with tarragon, I can’t wait to be able to taste them. Mirabelles in vinegar for a terrine this fall, I will test them every month. Super, I love the sweet and salty, here fruits generous in taste and in sugar, make come candied in honey vinegar and can be consumed all year round.

Recipe ingredients

  • Recipe for 1 boccal
  • 350 g of mirabelle plums
  • 100 g brown sugar
  • 1 cinnamon stick
  • 20 cl of white honey vinegar
  • 1 tablespoon of honey
  • 3 stalks of tarragon
  • 1 bay leaf
  • 1 teaspoon of 4-grain pepper

Instructions

  1. Rinse the cherries under running water, then dry them with a kitchen towel.
  2. Heat the vinegar with the sugar, honey and cinnamon stick.
  3. Let the vinegar cool while adding the bay leaf, cloves and bird’s eye pepper.
  4. Store your mirabelles in the jar.
  5. Pour the cold vinegar over the mirabelle plums, close your jar and leave to stand for 2 months, away from light.
  6. My favorite wine for this recipe will be chosen according to the terrine
