Recipe: Pork kidneys with mushrooms
Recipe for pork kidneys with mushrooms, I cooked them with an Italian red wine from Chianti. One-trimmed kidneys are fairly easy to cook, they can cook fairly quickly, overcooking the kidneys will cause them to become hard.
Recipe ingredients
- Pork kidney with mushrooms recipe: for 4 people
- 4 pork kidneys
- 1 onion
- 2 tablespoons of frying oil
- 35 g butter
- 1 tablespoon of olive oil
- 125 g of button mushrooms, drained weight
- 185 g canned forest mushrooms
- 1 tablespoon of frozen chives
- 30 cl of red chianti
- Salt and pepper mignonette 5 berries
Instructions
- Trim the kidneys or have them prepared by the butcher.
- Cut the kidney in half.
- Cut the kidney into strips crosswise.
- Heat the pan very hot with a spoonful of cooking oil.
- Sear the kidneys in the steaming oil and stir with a wooden spoon for 4 to 5 minutes.
- Filter the kidneys through a colander to extract all the fat.
- Place the kidneys in the pan and rinse them with lukewarm water, wringing them out with your hands
- Wash the pan and utensils.
- Heat the pan with the butter and the rest of the oil.
- Peel then finely chop the onion.
- Sear the onions in the pan, without letting them brown.
- Add the mushrooms and juice, let the water from the mushrooms completely reduce.
- Add the butter and the chives as soon as the water has disappeared in the mushrooms.
- Cook for 2 minutes.
- Add the pork kidneys, salt and pepper to the mignonette.
- Pour in the red wine.
- Simmer 10 minutes.
