  • 25 cl of red wine
  • 2 large shallots

  • 2 egg yolks

  • 1 teaspoon of mustard


  1. Prepare the mayonnaise

  5. Reduce until almost dry.
  6. Mix the reduced and lukewarm shallots with the mayonnaise.
  7. Reserve in the refrigerator until ready to serve.
