  • 25 cl of red wine
  • 2 large shallots
  • 1 teaspoon ground pepper
  • 1 large caper
  • Mayonnaise base
  • 2 egg yolks
  • 1 glass of oil
  • 1 teaspoon of mustard


  1. Prepare the mayonnaise
  2. Peel then finely chop the shallots.
  3. Heat the shallots with the red wine.
  4. Pepper generously
  5. Reduce until almost dry.
  6. Mix the reduced and lukewarm shallots with the mayonnaise.
  7. Reserve in the refrigerator until ready to serve.
