Recipe: Scallops with thick cheese
Recipe for scallops with redcurrants, a beautiful sweet and savory marriage, I loved these scallops, slightly tangy with redcurrants. I served my scallops with fresh homemade pasta. Scallops are often very expensive fresh but are more affordable frozen. You just have to choose them well, fleshy and with a little coral and let them thaw overnight. At home we love raw or cooked scallops, it doesn’t matter. Currants are abundant this year we see them everywhere.

- 12 scallops
- 125 gr currants
- 1 tablespoon of white wine.
- Peppercorns
Instructions
- Heat the butter in a pan.
- Add the scallops.
- Salt and pepper.
- Reserve the scallops as soon as they are cooked.
- Add the currants to the pan.
- Deglaze with the white wine, keep a little juice for the sauce.
- Serve on hot plates with the fresh pasta.
