  • 4 eggs
  • 1 liter of frying

  1. Cook the vermicelli in a broth of salted water.
  2. Soak the black mushrooms to rehydrate them.
  3. Peel the onion then cut it into julienne.
  4. Peel the carrots and cut them into julienne.
  5. Rinse the mint then dry it with food paper.
  6. Finely chop the mint.
  7. Add the bean sprouts
  8. Cut the black mushrooms into thin strips.
  9. Mix together by breaking the eggs.
  10. Pour hot water into a soup plate.
  11. Soften the rice leaves in hot water, then spread the rice leaves onto a cutting board.
  12. Take a large spoonful of the stuffing and place it at the base of the rice paper /
  13. Fold the ends of the sausages over the flesh.
  14. Roll the spring rolls tightly, let stand a few minutes so that the excess water is drained.
  15. Heat the oil very hot, then lower the heat as soon as you start cooking your spring rolls.
  16. Brown your spring rolls under a low heat, then place them on absorbent paper.
