Ingredients :
- 1 kg of squid
- 10 Roma tomatoes
- 1 small eggplant
- 3 cloves of garlic
- 1 onion
- 10 cl of white wine
- ½ small teaspoon of Espelette pepper
- 2 tablespoons of chopped parsley
- Salt and pepper
- Olive oil
- 1 glass of rice
Instructions
- Peel the garlic, crush it and brown it in a spoonful of olive oil.
- Add the onion cut into small squares, let it take a little color.
- Add the eggplant cut into small cubes, let them grill for a few minutes.
- Add the squids to your preparation over a low heat, so that they make their water.
- Strain the tomatoes in a pot of boiling water for 5 minutes, then remove the skin.
- Cut them into small cubes.
- Add the tomatoes as soon as the squids are ready, then the white wine, the Espelette pepper.
- Salt and pepper.
- Cook over low heat for 5 minutes.
