Tomato squid

We love these squids at home, probably a souvenir from our trips to Greece. This recipe is very similar to Provençal calamari, this region which specializes in seafood. This recipe for squid in sauce is an easy recipe to make, especially if you ask your fishmonger to prepare them for you.

Tomato Calamari recipe for 4 people:
Ingredients :

  • 1 kg of squid
  • 10 Roma tomatoes
  • 1 small eggplant
  • 3 cloves of garlic
  • 1 onion
  • 10 cl of white wine
  • ½ small teaspoon of Espelette pepper
  • 2 tablespoons of chopped parsley
  • Salt and pepper
  • Olive oil
  • 1 glass of rice

Instructions

  1. Peel the garlic, crush it and brown it in a spoonful of olive oil.
  2. Add the onion cut into small squares, let it take a little color.
  3. Add the eggplant cut into small cubes, let them grill for a few minutes.
  4. Add the squids to your preparation over a low heat, so that they make their water.
  5. Strain the tomatoes in a pot of boiling water for 5 minutes, then remove the skin.
  6. Cut them into small cubes.
  7. Add the tomatoes as soon as the squids are ready, then the white wine, the Espelette pepper.
  8. Salt and pepper.
  9. Cook over low heat for 5 minutes.
  10. Then add the rice and cook the rice cooking time, monitoring the liquid level.
  11. Add liquid if necessary so that the rice cooks.
  12. Add the chopped parsley and reduce to thicken your sauce.
