Recipe ingredients

  • Turkey cutlet with pesto recipe for 4 people
  • 400 g of chicken or turkey cutlets
  • 50g of Comté cheese in strips
  • 20 g pine nuts
  • 120 g pesto

Instructions

  1. Cut your cutlets lengthwise, then cover them with cling film.
  2. Tap with the flat of your knife to flatten the cutlet and make it more tender.
  3. Repeat the operation until you have obtained a very flat cutlet.
  4. Cut your cutlet giving it the desired shape.
  5. Cover the top of the cutlet with your pesto, then add the pine nuts.
  6. Put the Comté slices away and start rolling your preparation.
  7. Tighten your sausage so that it withstands cooking without coming undone.
  8. Wrap your sausage in plastic wrap, tightening it at the ends to give it a nice shape.
  9. Tie off the first end, then push the meat towards that end,
  10. Close the second end.
  11. Leave to rest for several hours in the refrigerator, so that they keep their shape.
  12. Remove the film.
  13. In a very hot and oiled pan, gently cook the turkey sausages, turning them regularly so that they take a nice color on each side.
