Recipe ingredients
- Dried duck breast recipe for 1 breast:
- 1 duck breast
- 500 g of coarse Guérande salt
- 2 teaspoons of sweet paprika
- 2 teaspoons of ground cumin
- 2 teaspoons of Espelette pepper
- 1 teaspoon of ground cloves
- 1 tablespoon of powdered oregano
- 1 tablespoon of coriander
- 1 teaspoon of ginger
- 2 tablespoons of cumin seed
Instructions
- Take a container and cover the bottom with coarse salt for at least 2 cm.
- Place the duck breast on the flesh side.
- Cover the duck breast with the second part of Salt.
- Pack down a little.
- Film everything and let stand 48 hours in the fridge.
- In a bowl mix the spices.
- Rinse the duck breast thoroughly then dry it without leaving any moisture.
- Rub the duck breast so as to penetrate the spices into the duck breast.
- Wrap the piece around a tea towel and let stand at least 21 days in the vegetable drawer of your fridge.
