Gorgonzola and Walnut Bread Recipe

Gorgonzola and walnut bread recipe for 4 baguettes
Ingredients :

  • 500 g of flour type T65
  • 325 g of water at 20 °
  • 100 g of liquid sourdough (or 25 g of dehydrated sourdough)
  • 5 gr of fresh baker’s yeast
  • 10 g of salt
  • 100 g walnut kernels
  • 100 g of gorgonzola

Instructions

  1. Preheat the oven to 250 °.
  2. Pour the flour and water into the robot’s bowl.
  3. Add the yeast, sourdough and salt.
  4. Mix for 5 minutes at low speed.
  5. Then mix for 10 minutes at high speed.
  6. At the end of kneading add the nuts, then mix at low speed.
  7. Form a ball.
  8. Cover with a damp cloth and let stand for 1 hour 30 minutes.
  9. Fold the dough by folding it halfway in half, at the end of growth the dough will have taken on volume.
  10. Flour the work surface, cut the dough into 4 equal pieces.
  11. Roll them lightly to give them an elongated shape, let stand for 15 minutes.
  12. Place under a damp cloth for 15 minutes.
  13. Cut the gorgonzola into small cubes
  14. Gently flatten the dough pieces with the flat of your hand.
  15. Spread the cheese
  16. Fold the dough pieces 1 third over a third.
  17. Turn the dough pieces over, then fold them in half lengthwise.
  18. Roll the dough pieces to give them a long shape of about 20 cm.
  19. Place under a damp cloth for 1 hour.
  20. Give 1 stroke lengthwise with the blade.
  21. Moisten with a brush and a little water.
  22. Bake for 10 minutes in the bottom of the oven.

Cooking time: 18 minutes
