  • 1 bunch of asparagus
  • 80 g butter
  • Salt and pepper
  • 4 sprigs of lemon thyme


  1. Open your vanilla bean in half, scrape with the tip of your knife to extract the flesh of the vanilla.
  2. Melt the butter and place the vanilla flesh and the pod on the butter.
  3. Cut the tips of the asparagus and brown them in the vanilla butter halfway through cooking.
  4. Gently place the fish fillets in the skillet skin side down and let your fillets cook gently. Drizzle the fish regularly with the vanilla butter, without turning them.
  5. Salt and pepper.
  6. Crumble the lemon thyme over the fish while cooking.
  7. I used the rest of the asparagus for an appetizer.
